Pelagos sits at the heart of Hotel Solterra. Its name comes from the ancient Greek word for the open sea, and that's exactly where everything on the plate begins: fresh Adriatic fish, shrimp, octopus and scallops, guided by a Mediterranean hand and modern, at times Asian, technique. The same idea of the sea lives in the wave of our emblem, and in the view from every table. Here, there's no rush, dinner is an occasion that lingers, paired with a carefully chosen list of Croatia's finest wines, in the refined setting that belongs to a hotel on the coast.
Our cooking is rooted in the Mediterranean but speaks a contemporary language. Starters set the tone, steak tartare, shrimp ceviche, tuna tataki, burrata with prosciutto and figs. Then come house-made pasta and risottos: fettuccine with octopus ragù, pappardelle in a Marsala-truffle sauce, a creamy risotto with shrimp, saffron and seared scallops. Among the mains are sous-vide roasted octopus, monkfish miso piccata, slow-roasted lamb, and beef fillet with potato pavé. Alongside runs a full sushi programme, our signature Pelagos and Solterra rolls, nigiri, sashimi, and tuna and salmon tartare.
The wine list is a journey through Croatia's wine regions, from the Graševina and Traminac of Slavonia, through the Malvazija and Teran of Istria, to the Pošip, Plavac and Vugava of the Dalmatian islands, with labels from Plešivica and the Zagorje-Međimurje hills. Whites, reds, rosés and sparkling are offered by the glass, and the list is crowned by the great Champagnes, up to the most prestigious cuvées. For every dish, the right pairing.
Pelagos takes its time. The evening unfolds slowly, from the first bite to the last glass, with the sea in front of you from every table. Precision on the plate, calm in the room, and a view that does part of the work: fine dining that never feels stiff, only — as it should be — polished and warm.
